Dahi Whole Milk Indian Style Plain Yogurt
1 cup White Pea Beans
1 tsp Turmeric, Ground
1 tsp, crumbled Bay Leaf

1 serving Ground Mango Powder Amchoor
1 cup Sorghum Flour and wheat flour mixed

Chutney preparation

For Green chutney : Grind coriander, Jeera, Ginger, Garlic, Lemon Juice, and one cube ice.

For Tamarind chutney : Soak tamarind and jaggery, and then add cooked asafoetida, ginger, red chilli, kalonji to it.

Cooking Instructions

Step 1:

Preparation of white peas

Soak the white peas, boil them with turmeric, salt and Indian bay leaves in a pressure cooker upto 6 whistles.

Step 2:

Preparation of dough

Make flattened small circular shapes of dough by incorporating wheat and sorghum flour, with salt, kalonji and carom seeds.

Step 3:

Prepare the stuffing:

Boil and mesh potatoes and add fried cumin seeds, mango powder and add one spoon of green chutney.

Step 4:

Stuffing the samosas :

Roll the circular shaped dough in shape of cone like samosas, stuff them with boiled potatoes. Fry them on a medium flame to get the desired crisp.

Step 5:

Add the toppings :

Layer the fried samosas with cooked white peas, yoghurt, pre-prepared tamarind and green chutney, chopped onions, tomatoes and squeeze few drops of lemon.

Step 6:

Add the chaat masala. Take black salt, fried cumin crush them in a Mortar and Pestle and sprinkle it on the chaat.. Enjoy your chatpati Indian chaat!
