Easy Vegan Recipes for Your Diwali

We generally celebrate Diwali with loads of Sweet and fat loaded food which is not so healthy. I get it that we want to have delicious food on festivals. But, what if we share some really easy to cook, healthy and vegan recipes that are super healthy and tasty. Your family would totally love these recipes and they are not going to suffer due to extra sugar, fat and cholestrol.

Note: These are not our recipes. These recipes have been developed by Sharan India. We are simply compiling them here and sharing for the benefit of our users.

Oil-Free And Guilt-Free Onion Bhajias

List of Ingredients:

1.4 medium onions, sliced long and medium fine
2.4 heaped tablespoon (tbsp) besan flour
3.1/4 teaspoon (tsp) chilly powder
4.1/4 tsp Haldi powder
5.Ginger Chilly paste as per taste
6.Ajwain as per taste

Method

1.Mix all the ingredients together and let them stand for about 2 mins.
2.The onions will release water. This will help bind the mix.
3.Place them on a baking tray in little blobs of about 1 tbsp (Tray might have to be greased, depending upon the tray)
4.Bake in a preheated oven at 190 till it begins to brown. Serve with chutney.

Coconut Milk Kheer

List of Ingredients:

1.1 Cup ragi noodles/ unpolished rice
2.1 Coconut- milk removed
3.1/2 cup chopped dates/raisins
4.1 tsp cardamom powder
5.3 tbsp cashews/raisins/almonds (roasted)

Method:

Cook the ragi noodles or rice.
Mix the dates and raisins with the coconut milk.
Heat the coconut milk and add it to the noodles/rice.
Flavour with cardamom and nuts.

Instant Chocolate Banana Ice Cream

List of Ingredients:

1.1 Frozen Banana
2.1tbsp cacao powder
3.1 tbsp peanut butter
4.1/4 tsp vanilla extract
5.A pinch of salt

Method:

1.Thaw the banana to soften it just a little bit.
2.Add all the ingredients into the blender and blend them until everything is smooth.
3.Devour Immediately

Baked Cheese Mushroom

List of Ingredients:

1.Button Mushrooms with the stems removed
2.Cashew Cheese: Soak Cashews for 6–8 hrs. Blend into a paste. Ferment for 8–10 hrs and then add lemon and salt for sourness.
3.Optional Flavouring for Cheese (Chopped Sundried Tomatoes/olives/jalapenos/chillies/mixed herbs)

Method:

1.Mix the flavouring to the cheese.
2.Stuff the mushrooms with the mix.
3.Bake till lightly browned on the top and serve hot.

Millets Oats Crackers

List of Ingredients:

1.100 gm Jowar (sorghum) Flour
2.100 gm oat flour
3.Coconut milk for kneading
4.Ajwain
5.Grated Ginger
6.Fresh or Dry Herbs as per your taste
7.1 tbsp sesame seeds
8.Salt as per taste

Methods:


1.Knead the Jowar flour and oats flour with coconut milk.
2.Add ajwain, ginger, herbs of your choice, sesame seeds and salt.
3.Roll out into the chapati form
4.Cut lengthwise into a cracker shape.
5.Bake at medium heat till crisp for 20–30 minutes.
6.Serve with chutney and satiate your hunger.

Onion Crackers

List of Ingredients:

1.1 Cup wheat flour
2.1 Cup besan
3.1 medium chopped onion
4.Cilantro leaves finely chopped
5.Methi dry leaves
6.Black pepper powder
7.Green Chilly Chopped
8.Cumin Seeds
9.2 tbsp sesame seeds
10.2 tbsp cashew cream
11.1/2 tbsp baking soda
12.1/2 tbsp yeast
13.Warm Water

Method:

1.Mix everything and make a tight dough
2.Keep it in an airtight container for 20–30 minutes
3.Now make small balls and roll it as thin as possible to make them crunchy.
4.Cut with a cookie cutter according to your desired shape and prick it with a fork so that they don’t pop up.
5.Place them on a parchment paper or a baking paper and bake them for 20 mins on 170–180 degree.
6.Flip them 10 mins later.
7.Let them cool and store them in an airtight container.
8.They last for 10–15 days.

Almond Milk Thandai

List of Ingredients:

1.10–20 almonds soaked overnight
2.Cucumber or melon seeds
3.2 Dates (soaked, if hard)
4.Elaichi powder
5.Freshly ground black pepper

Method:

1.Add the almonds into a blender with a little water and blend till you get a thick paste.
2.Put in the deseeded dates and Elaichi powder.
3.Add ice, if required and blend again.
4.Garnish with a little freshly ground pepper.
5.Cool and serve.

Mango Chia Seed Pudding

List of Ingredients:

1.2 cups of freshly made coconut milk
2.1/2 cup of chia seeds
3.A little bit of Vanilla powder
4.1/4 tsp of cardamom
5.1 medium-sized mango
6.2 tbsp date paste (optional)

Method:


1.Pour the chia seeds into a mason jar and mix with coconut milk, cardamom, vanilla and date paste and put the lid on.
2.Shake well and refrigerate for up to an hour or overnight.
3.Wait till chia seeds become translucent and swell up and the milk will give a creamy white jelly appearance and consistency.
4.Prepare the mango by removing the skin and seed.
5.Puree the mango in a blender.
6.Serve either mixed or in layers.

Almond Giner Bites

List of Ingredients:

1.1/4 cup almonds
2.1/4 almond butter
3.1/4 cup pecans or walnuts
4.1/4 tsp ground ginger (dried)
5.1/2 cup of dates (pitted)
6.1/2 cup unsweetened shredded coconut or sesame seeds

Method:

1.In a food processor combine the nuts and ground ginger.
2.Pulse into a fine meal.
3.Add the almond butter and dates and pulse until well combined.
4.Roll into 1 inch balls.
5.Add the sesame seeds or shredded coconut into a small bowl.
6.Roll each ball in the bowl to coat with sesame seeds or coconut.
7.Devour 🙂

Peanut Butter And Banana Ice Cream

List of Ingredients:


1.4 bananas
2.1 tbsp peanut butter
3.A pinch of cinnamon
4.Pistachio/Coconut for garnishing

Method:

1.Peel bananas and freeze them for 4 hours.
2.Once done, cut into half and add peanut butter and grind till smooth.
3.Sprinkle some cinnamon and pistachio/coconut.

Chocolate Kaju Katli

List of Ingredients:


1.2 cups cashews
2.1 cup date paste
3.80 ml of water
4.1 tbsp unsweetened cacao powder
5.1/4 tsp cardamom powder

Method:

1.Clean cashew nuts and roast till crunchy (Don’t let them discolour.)
2.After it has cooled down, add to a blender and make a fine powder.
3.Add date paste, Cardamom and water in a heavy-bottomed vessel.
4.Melt on low flame.
5.Bring it to boil and boil for a minute.
6.Add powdered cashew nuts and remove from flame immediately.
7.Mix well to avoid lump formation.
8.Sieve cacao powder to this mixture and mix well.
9.Put it back on the stove and cook till you are able to make a non-sticky, softball with the dough.
10.Transfer the mixture to a butter paper and leave aside till warm. When warm cover with another butter paper.
11.Use a rolling pin to flatten the dough.
12.Cut into desired shapes.
13.Allow to cool and transfer to an airtight container.

Amaranth Laddoos

List of Ingredients:

1.1 cup amaranth
2.1 cup fresh coconut grated
3.1/2 tsp elaichi powder
4.1 cup dates, pitted

Method:

1.Roast the amaranth and mix in the fresh coconut and elaichi powder.
2.Then knead in the dates and roll into balls.

Makhana Kheer

List of Ingredients:

1.1 cup makhana
2.1 cups of coconut milk
3.2 tbsp soaked cashew nuts
4.12 soft dates
5.2 whole cardamom
6.2 tbsp roasted almonds sliced
7.A pinch of Kesar (optional)

Method:

1.Dry roast makhana with the whole cardamom till they are crispy for about 5 minutes on slow flame.
2.Keep it aside to cool.
3.Powder 2/3rd of makhana with cardamom
4.Blend the soaked cashew buts, powdered makhana, dates with coconut milk very well.
5.Boil the blended milk, and add 1/3 rd of the whole makhana.
6.Add sliced almonds and Kesar for garnish.
7.Serve chilled or hot as per your wish.

Millet Bites

List of Ingredients:


1.1 cup puffed amaranth
2.1 cup steamed sweet potato
3.1/4 cup each chopped capsicum, onions, carrots, cucumber & peanuts (soaked and roasted)
4.1/4 cup of chopped coriander
5.2 tbsp sev
6.1/4 green & sweet chutney
7.2 to 3 spoons chaat masala

Method:

1.Mix all of them together and serve.

Creamy Delight

List of Ingredients:


1.3 Chikoos
2.2 Frozen bananas
3.200 ml of coconut milk
4.1 tbsp peanut butter (roasted peanuts blended into a butter)
5.Soaked dates and raisins for sweetness.

Method:

1.Blend all of the above.
2.Let it set in the freezer overnight or 4–5 hrs would be enough.

Chocolate Mousse

List of Ingredients:

1.2 ripe avocados
2.1/2 cup cocoa
3.3/4 cup date paste

Method:

1.Blend all the ingredients in a food processor or a blender.
2.The mixture should be smooth and homogenous.
3.Pour into small serving dishes.
4.Refrigerate for 2 hours.
