Bihari Street Food Dish
Dhuska/Dushka is a kind of deep fried snack eaten in states like Bihar, Jharkhand. It is a very popular street food. The ingredients used are deep fried and serves as crispy savoury sort of dish, served with chutney.
|1 cup Rice, White, Medium-grain, Cooked|
|1/2 cup white Urad Dal|
|Half cup chana dal|
|1 tsp Ginger, Ground|
|1 tsp Curry Powder|
|1 tsp Cumin Seed|
|1 tsp Salt, Table|
|1 tsp Sugars, Granulated|
|1 tsp Turmeric, Ground|
|1 tsp, crumbled Potatoes, White, Flesh And Skin Raw|
|1 cup slices Beets|
|1 tbsp Vinegar, Cider|
|1 Mango Ripe, Fresh not dried|
|Indian bay leaves (tez patta)|

- Boil the potatoes for the filling
- Pickle the sliced beetroot with salt, sugar and vinegar,
- Keep the masalas ready for seasoning and dice the mangoes
Soak-grind dal and rice :
Wash and then soak rice, urad and chana dal .Grind them in a grinder to obtain a thick batter
Add seasonings and grind batter : Mix chopped ginger, green chilli, curry leaves and jeera along with salt, pinch of sugar (for seasoning) and turmeric
Prepare Ghugni :
For ghugni- White peas are soaked and boiled with salt, turmeric and Indian bay leaves (tez patta).
Heat oil : To assemble the batter, add pre prepared ghugni (mashed peas) .
Heat oil in a pan on a medium flame
Drop the batter in oil : Add batter in the oil in the form of balls, or spoon it in the hot oil one by one. Fry them on a low flame for better crisp.
